The default 128MB should be far more than sufficient. The only time phpBB is going to consume a lot of RAM that I'm aware of is thumbnail creation and even 128MB is sufficient for some pretty big images.
Go into the ACP and then the system tab, click the php information link. Find the value for memory_limit to confirm what it's set at.
